ZUCCHINI SQUASH BOATS

Cook time: 20 minutes

Servings: 2-3

Ingredients:

3 Zucchini Squash (yellow)

1 lb lean ground chicken (97/3)

1 tbsp garlic paste

Ground cumin

2 cans diced green hatch chilis

1 cup brown rice (instant steam bag - your choice)

Diced cherry tomatoes

Shredded mozzarella cheese

Cilantro

Instructions:

Pre-heat oven to 400 degrees.

Cook lean ground chicken on medium skillet on medium heat. Add garlic paste and cumin and cook 70% of the way through.

Add 2 cans of diced green hatch chilis and brown rice and finish cooking until all chicken is brown.

Slice squash in half and scoop out insides to create a boat.

Fill each boat with ground chicken mixture. Add sliced cherry tomatoes, cilantro, and shredded mozzarella cheese on top.

Place on a baking sheet and cook for 20 minutes or until cheese is melted.
