BRAISED SHORT RIB PASTA

Ingredients:

4-5lb Beef Short ribs

2 cups Beef Broth low sodium

1 bottle red wine

2 boxes of butternut squash spirals

Parmesan Cheese

1 Yellow Onion

Garlic cloves

4 roma tomatoes

Dijon Mustard

Parsley

Olive oil

Instructions:

Click ‘Saute’ feature on Instant pot and add olive oil.

Season Beef ribs with salt and pepper.

Sear each side for 2 minutes then remove from the instant pot.

Add olive oil to empty pot.

Chop whole onion and add to pot.

Cut 2 garlic cloves and add to pot.

Quarter tomatoes and add to pot.

Add 3 tbsp Dijon Mustard and stir.

Add 1 cup of red wine and stir scraping the bottom of the pot.

Add the short ribs back to the pot.

Add 2 cups of beef broth

Set instant pot to ‘Meat’ (or high pressure) for 50min.

With about 15min remaining on the meat, add pasta to a skillet with salt and pepper and cook on low to medium heat.

Release pressure from the instant pot (fast), remove the ribs and shred.

Pour remaining juice into the food processor.

Add half a cup of parsley to the processor and blend.

Pour blended juice back into the instant pot.

Place shredded meat back into the pot.

Add pasta to the bowl. Layer meat with little juice.

Sprinkle parmesan and add parsley flakes.
