SUGAR CRUSTED SALMON WITH MANGO SAUCE ON COCONUT RICE

Ingredients:
Salmon glaze -
2 tsp brown sugar
2 tsp olive oil
2 tsp garlic
2 tsp chili powder
Coconut rice -
1 cup of white rice
1/2 cup lite coconut milk
1 cup of water
Mango salsa -
1 mango cubed
1 jalapeño diced
1/2 red pepper
1/2 red onion
1:4 cup cilantro
Instructions:
In a small bowl mix all ingredients and spread evenly on top of the salmon. This glaze will cover 20oz of salmon
Air fry for 14min at 400 degreees.
Prepare the rice as the salmon cooks
1 cup of uncooked white rice will make 2 cups cooked. Add 1/2 cup of light coconut milk with 1 cup of water. Bring to a boil then let sit covered until the salmon is fully cooked
While the salmon and rice are being cooked, cut vegetables for the salsa
Combine the mango, jalepeno, 1/2 red onion, 1/2 red pepper, and cilantro into a small bowl.
For 2 large servings, you will have 2 5oz cooked salmon pieces on top of 1 cup of rice and top with salsa.
Divide into single 5oz servings of salmon with 1/4 cup of rice for 4 servings
