MEAL PREP - Chicken, veggies, brown rice

Ingredients:
3 boneless chicken breast (about 2 lbs)
3 bell peppers (your choice of color)
1 red onion
Brown Rice (Uncle Ben’s 10 min. brown rice used, 1 cup of dried rice makes 4 servings)
Salt & Pepper
Garlic Powder
Red pepper flakes
Cayenne
Sriracha (optional)
Instructions:
Pre-heat oven to 400 degrees.
Slice bell peppers and onions into strips. Cover with olive oil and salt and pepper. Place on baking sheet.
Cut off excess fat on chicken breasts. Season with salt, pepper, garlic powder, red pepper flakes, cayenne, or any seasoning of your choice.
Place chicken breast on baking sheet with veggies. Bake for 25-30 minutes.
While the chicken is cooking, prepare the brown rice by the instructions on the box.
When the brown rice is done, scoop 1 cup of rice into each meal container.
When the chicken and veggies are done, let the chicken cool for 5 minutes, then slice.
Place an equal amount of chicken and veggies on top of the brown rice in each container.
Use sriracha on top is desired. Enjoy.
