Chicken Enchiladas

Serves: 4-5 servings

Ingredients

  • 1 lb cooked shredded chicken breast (whole rotisserie chicken, or 3 pack of chicken breast)

  • Taco seasoning packet

  • 1/4 cup plain greek yogurt

  • 1/2 cup salsa

  • 1/2 cup shredded cheese (cheddar, pepper jack, your choice)

  • 1 can diced hatch green chilis

  • 10 tortillas (low carb tortillas used in video)

  • 1 can green chili enchilada sauce (optional)


Instructions

  1. Shred cooked rotisserie chicken, or cook 3 chicken breast.

  2. Pre-heat oven at 375 degrees.

  3. Place shredded chicken in large mixing bowl.

  4. Add greek yogurt, salsa, green hatch chilis, cheese, and taco seasoning. Mix well.

  5. Spray large cooking pan with olive oil.

  6. Scoop 1/4 cup of mixture and roll tightly into flour tortilla.

  7. Pour green enchilada sauce on top of enchiladas and add cheese (optional).

  8. Bake in oven for 25 minutes.

  9. Add additional greek yogurt on top and serve. Enjoy.
