BREAKFAST SKILLET

Cook time: 25 minutes

Ingredients:

6 eggs

2 bell peppers

2 small potatoes

1/2 red onion

Avocado

Fat free cheddar cheese

Instructions:

Preheat oven to 400 degrees.

Cut vegetables into strips, potatoes into small cubes, and season with salt and pepper in a gallon zip lock bag.

Add vegetables to a large skillet. Add 6 whole eggs on top on vegetables.

Bake for 25min in oven.

Add 1/4 cup of fat free cheddar cheese and avocado slices if desired.
