BBQ Chicken sandwich
Prep Time: 5-10 minutes
Cook Time: 4 or 8 hours in slow cooker
Ingredients:
2 lbs boneless chicken breast
2 Tbsp chicken stock
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
1 teaspoon cayenne pepper
1 1/2 cup BBQ sauce (your choice)
Sliced jalapeños
Buns
Instructions:
Turn slow cooker on and add 2 tbsp of chicken stock. Let heat up for 5-10 minutes.
Add half the seasoning to the slow cooker and and mix.
Add chicken breast and pour the remaining seasoning on top of the chicken.
Cook on high for 4 hours, or low for 8 hours.
Remove chicken from slow cooker and let it cool for 5 minutes.
Prepare coleslaw kit with the dressing in a medium bowl.
Place the chicken back in the slow cooker and shred. Add BBQ sauce.
Toast buns with olive oil spray.
Add shredded chicken, coleslaw, jalapeños, and pour a little extra bbq sauce on top is desired. Enjoy.
