Protein banana bread

Dry Ingredients:

1 1/4 cup quick oats

1-2 scoops of vanilla protein powder (any brand, use around 45g)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon kosher salt

Wet Ingredients:

2-3 ripe bananas (1 cup mashed)

2 large eggs

1/4 cup maple syrup

1/2 cup plain greek yogurt

1 teaspoon vanilla extract

Instructions:

Mash 3 bananas in a medium sized mixing bowl to make 1 cup. Add the eggs, maple syrup, greek yogurt, vanilla extract, and mix.

Blend the oats with a blender or magic bullet. Pour into a medium mixing bowl and add protein, baking powder, baking soda, salt and mix.

Pour wet ingredient bowl into the dry ingredient bowl and mix all together.

Spray your loaf pan with olive oil and pour in mixture about 2/3 to the top.

Place in Air Fryer, and bake at 350 for 22 minutes. The pan used was 8in x 4 in and cook time will vary based on size. To test, stick a butter knife in the center of the loaf and make sure it comes out clean. If not, put back into the air fryer for a few additional minutes.

Let banana bread cool, about 30 minutes.

Cut into 8 servings (250 calories, 12g protein per serving)
